I can’t believe how much the wine consumer is willing to praise a wine solely because of its provenance. They will swoon over a famous wine even though it might be badly flawed. But I guess that’s human nature and not likely to change.
Riesling and Lamb
Good wine pairing are, well, whatever the particular taster likes. This definitely isn’t a pairing that seems like it would work, but apparently it did. No so sure how this would have worked out without the Hoisin sauce, though.

Maybe I’m just not environmentally conscious enough, but I just have a really hard time believing that, in a world where Chinese cities can generate enough air pollutants to make their air three times worse than the worse level of pollution generally recognized, that wine corks are enough of an issue to generate the amount of interest they receive.
