I had always thought that “varietal” was a noun until one reader called my attention to the fact that it’s an adjective—“variety”
is the noun. The same point is made here. But with so many people using varietal as a noun, it’s becoming a noun. I don’t have a problem with that, as that’s simply how language changes over time.
